We have some summer sickies in our home this week, Levi came down with a bad sore throat and fever which is just no fun. The weather also turned a bit cooler and chilly and so we canceled all of our plans and decided to lay low. The kids have been on a Back to the Future marathon (Simon is very excited that 2015 is suppose to include flying cars :)) and I felt like baking something soft and warm and comforting for my littles too. Nothing fancy just some good old fashion flour, butter and brown sugar really. These never last long and remind me of the fall which is so quickly approaching. Back to school and gearing up for the massive sleuth of birthdays and then holidays...I am savoring these last few moments of summer even if they are a little slow and quiet and under the weather.
Cinnamon Scones (makes 12)
2.5 cups of flour
3/4 cup of brown sugar
2.5 tsp of baking soda
.5 tsp salt
2 tsp cinnamon
6 Tblsp COLD butter cut into pieces
1 cup of heavy cream
Add the flour, sugar, baking soda, salt and cinnamon to a stand mixer and blend then add the butter pieces and mix until it creates a fine meal. I use my hands to make sure the butter is all incorporated well before adding the cream and mixing a bit more. Dump out and shape into a round and cut into twelve slices, sprinkle some raw sugar and cinnamon on top if you like. Bake at 425 degrees for 15 minutes.

Oh, these look amazing!! I'm sorry everyone is feeling under the weather! I can't think of anything that sounds better than a warm scone--so yummy and comforting, especially ones you make! :)
