Friday Pieday :: Fudgey Pudding Cake (vegan/gf)


This week for Friday Pieday Josie and Zeb wanted to help with my date night in prep for Dinner at Eight and they were excited about the fudgey chocolate pudding cake I had picked out for dessert. I thought it would be the perfect thing to bake together this week even though it wasn't technically a pie - it was fun for them to get to help with mommy and daddy's special evening together and this healthy version of a pudding cake was so fun to make with them!


This recipe comes from one of my favorite cookbooks ever - Oh She Glows, Angela Liddon is basically my hero and her vegan recipes are always a hit around here! This pudding cake called for all kinds of healthy stuff like oat four and almond milk and raw cocoa powder. There is a little bit of coconut sugar in the recipe but otherwise nothing guilty going into this dessert including flax eggs and coconut oil.


Josie was a huge help of course and I even caught her licking the bowl - she loves chocolate just as much as her mama that is for sure!


The recipe calls for hot coffee and oh that sounds so divine to me but my family isn't as big on the flavor of coffee as I am so we opted to use the hot water instead. I have a feeling the addition of the coffee would've taken this one up a few more notches in the yum factor!


While the cake cooked the kids helped me set up all of the candles and lights for the evenings date - it was really fun to do together and since I was surprising Chris they couldn't wait to see his face when he came home to the romantic scene.


I let all four of the kids taste the cake too before dinner and there were certainly no complaints on this one. It did have a distinct oat flavor and you cold tell it wasn't laced with tons of butter or eggs but it was really yummy and so guilt free - will be making it again for sure!

Fudgey Mocha Pudding Cake from the Oh She Glows cookbook.

Ingredients:

1 T ground flaxseed
1.5 cups oat flour (I ground mine from rolled oats in the vitamix)
3/4 cup plus 1/3 cup of coconut or granulated sugar
1/3 plus 2 T of raw cocoa powder
1/3 cup chocolate chips
3/4 tsp sea salt
1.5 tsp baking powder
3/4 cup almond milk
2 T coconut oil, melted
1.5 tsp vanilla
1 1/4 cup of hot decaf coffee or hot water

Instructions:

Preheat the oven to 375°F (190°C). Lightly grease an 8-inch (2-L) square glass baking dish.

In a small bowl, whisk the flaxseed and 3 tablespoons (45 mL) water together. Set aside.


In a large bowl, mix together the oat flour, 3⁄4 cup (175 mL) of the sugar, 1⁄3 cup (75 mL) of the cocoa powder, and the chocolate chips, salt, and baking powder.


In a small bowl, whisk together the flaxseed mixture, almond milk, oil, and vanilla. 


Pour the milk mixture over the flour mixture and stir until thoroughly combined.


Pour the batter into the prepared baking dish and smooth out the top evenly with a spoon.


In a small bowl or mug, combine the remaining 1⁄3 cup (75 mL) sugar and remaining 2 tablespoons (30 mL) cocoa powder. Sprinkle the mixture evenly over the batter in the baking dish.


Slowly pour the hot coffee over the cocoa powder mixture, ensuring that the coffee completely covers the mixture. The cake will now look like a complete disaster, but this is normal. Promise.


Bake for 27 to 33 minutes, uncovered, until the cake is semi-firm on top but bubbly and gooey around the edges.


Let the cake cool for 5 to 10 minutes before digging in (that's if you can wait that long!). If desired, serve with vegan ice cream, along with a dusting of confectioners' sugar and toasted walnuts on top. 


Tip: For a nut-free option, swap the almond milk for a nut-free non-dairy milk (such as coconut milk) and leave out the optional walnuts. For a soy-free option, use soy-free non-dairy chocolate, such as Enjoy Life brand.



Friday Pieday // Derby Pie


I had never heard of Derby Pie until just a few weeks ago when I was on the hunt for new exciting ideas for Friday Pieday. As soon as I saw it I was so intrigued, it's basically like a chocolate chip cookie in a pie crust with pecans. My family isn't super big fans of nuts in their baked goods but the recipe was so unique and easy so I figured we could make some substitutions for the nuts.


This one did not disappoint. It was so fast and simple and we basically had everything on hand to make it too which is the best in my opinion. Josie and Zeb were big helpers and we decided to use white chocolate chips along with the dark instead of the nuts…and we figured since we made some adjustments we could change the name too. How's - The Seahawks Are Going to the Superbowl Again Pie…or Championship Pie? :) pretty excited about our Hawks over here guys!


We went with a pre-made crust on this one which made it extra easy and the kids had fun doing most of the work, also I should mention this is a one bowl pie - practically unheard of!!


It turned out pretty perfect, I'd say my little pie maker was quite pleased with herself! The pie literally tastes like a cookie in a pie crust, you can eat it with a fork or with your hands, I am positive a scoop of ice cream would not be bad on it either but we stuck with just the pie this time.


Definitely a score all around on this one - I am sure we will be making it again and again! Happy Friday you guys, I hope you have the sweetest weekend!

Derby Pie or Championship Pie :)

1/2 cup melted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1/2 cup flour
1 cup chocolate chips
1 cup white chocolate chips (or pecans)
pie crust (we used a pre-made crust)

Mix the melted butter and sugar in a bowl until the sugar melts a bit and then add the eggs and vanilla and mix well.

Add the flour and salt and combine well and then stir in the chocolate and white chocolate chips. Pour the mixture into the pie crust and bake at 325 degrees for 1 hour.

Let cool at least 1-2 hours before serving.

Friday Pieday // Cinnamon Roll Pie


OK so first of all in my defense the recipe called this a pie. Cinnamon roll pie?! I mean what could be better than that? So we decided to go for it, it was super easy and sounded amazing. 

The pie ended up being all of those things but it was also basically a recipe for cinnamon rolls in a pie plate so we saved it for breakfast the next morning and it paired perfectly with orange juice and coffee. Pretty much perfect for a Saturday morning brunch…but maybe only once or twice a year because, holy calories Batman! :)


Josie and Zeb were able to really get their hands dirty and help with every step of this one which made it super fun. And the clean up wasn't bad at all. Definitely a great recipe to do with the kids in my opinion. And everyone looooved these!


In fact there was not a drop left after breakfast…which is actually great in my opinion too because I do not need a pie sitting around on my counter starring at me to eat it…because I would've :).


Bottom line we had so much fun making this one and we will make it again maybe the morning after Thanksgiving for Christmas kick off brunch or even Christmas morning - although I usually make homemade cinnamon rolls for that but these are pretty amazing and could definitely stand in!

Cinnamon Roll Pie from Averie Cooks
makes 8 to 12 servings

8-count package of refrigerated cinnamon rolls8 ounce package of cream cheese, softened
1/2 cup butter, softened (1 stick)
1 cup sugar
1 teaspoon vanilla extract

For the Cinnamon Strudel Topping
1/3 cup all-purpose flour
1/3 cup old-fashioned rolled oats
2 tablespoons brown sugar
1 teaspoon cinnamon
pinch salt, optional
2 tablespoons butter, melted
1/2 teaspoon vanilla extract

Preheat your oven to 350 degrees, spray a deep pie dish (the rolls will rise so make sure to accommodate for that) generously with some cooking spray or melted butter and set aside.

Place the cinnamon rolls in the dish, it's ok if there are gaps and then cream together the butter and cream cheese in a stand mixer until light and fluffy. Add the sugar and the vanilla and blend until smooth and then spread the mixture over the cinnamon rolls evenly covering the entire dish.

Make the strudel topping by combing the flour, oats, cinnamon, salt and sugar in a bowl and stirring with a spoon. Add the melted butter and the vanilla and toss together until pea size clusters form. Sprinkle the topping evenly over the top of the cream cheese layer. Bake for 28-32 minutes until the edges just begin to brown very slightly, do not over bake. You might want to place a cookie sheet underneath the rolls as well in case it runs over the edges.

Allow it to cool before serving. You can gently reheat in the morning like we did by putting the pie back in the 350 degree oven for a few minutes.

Friday Pieday


When I started doing Friday Pieday with the kids last year I really had no clue what I was doing (still don't) or where it would lead, but for about six or seven weeks every Friday I just made a point to bake a pie with whoever was around and wanted to join in. The tradition stuck like glue with them and in fact even though we took a break from making a pie every week they still ask, without fail all the time if it's Friday yet and if we get to make a pie.


It was kind of shocking to me actually how much the little act of intentionality worked on them and boosted their confidence so much in fact just this week Grandma told Josie that Grandpa loves apple pies and apparently she beamed and said "well I know how to make pies!" and that just made my heart swell with joy!


So I've decided to make it a yearlong goal to make a pie as many weeks as possible with the kids in 2015. We shall see where it leads and I know I will learn a ton, I am not a great pastry chef by any stretch of the imagination just a Mom on a mission to bless her kids with a special tradition!


I mentioned to a few friends that I was picking back up with the project and got a few comments like "that is crazy, do you even sleep?" :) ha! Made me crack up because I TOTALLY get the intimidation factor and stress of baking with toddlers - I thought I'd share just a couple things I've learned so far in case you were thinking of starting a similar tradition or are groaning at the thought of what a mess it would be.


The first thing I do is choose the pie with the kids in advance and make sure we have all of the ingredients on hand for Friday before Friday rolls around. Nothing worse than not being prepared.


If the pie has a really involved crust or many many steps I usually make the dough the night before or try to do any of the steps in advance so that Pieday is not complicated or stressful for me!


Make sure your work space is clean and set out all of the ingredients and the tools needed before calling the kids into the kitchen and if you want to photograph the experience have the camera there too so that you aren't looking for it with flour all over your hands with the kids grabbing and flinging things while you scramble.


And after we are done making the pie and get it into the oven or fridge I like to have a little snack and a special movie or activity all set to transition the kids onto the next thing and give me a chance to clean up alone - I know it's good to have the kids help with clean up but on Pieday for the most part I like to get the crazy mess under control quickly making my stress level a lot lower.


And then make a HUGE deal when the pie is served. We usually do pie right after dinner on Friday and we ooh and ahh and set special plates out - seriously you will be shocked at how they beam with pride, it's my favorite part!
