That's right - today is my 32nd birthday you guys and so I thought it would be super fun to celebrate with all of you by throwing a good old fashion birthday party, blog style!!

But first things first I want to share with you this super yummy recipe I developed for:
vegan pumpkin cupcakes with maple glaze
They are sooo good and so simple and the frosting was inspired by one of my favorite cinnamon roll recipes from none other than the Pioneer Woman but those are not vegan and so I played around and came up with something equally as tasty in my opinion, enjoy!
Vegan Pumpkin Cupcakes with Maple Glaze (makes 2 dozen):
3 1/2 cups all-purpose flour
2 1/2 cups sugar
2 1/2 cups sugar
2 tablespoon baking powder
1/2 teaspoon salt
2 teaspoon ground cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
2 cup pureed pumpkin (Fresh or from a can; not pumpkin pie mix)
1 cup soy or almond milk
1 cup vegetable oil
4 tablespoons molasses
1/2 teaspoon salt
2 teaspoon ground cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
2 cup pureed pumpkin (Fresh or from a can; not pumpkin pie mix)
1 cup soy or almond milk
1 cup vegetable oil
4 tablespoons molasses
Preheat oven to 400°F. Grease two twelve-muffin tin. (I can usually get an additional mini muffin tins worth out of this recipe)
Whisk together pumpkin, soy milk, oil, and molasses. Add the flour, sugar, baking powder, salt, and spices and mix until well incorporated.
Fill the muffin cups two-thirds full. Bake for 18 to 20 minutes, until a toothpick or knife inserted in the center comes out clean.
Glaze:
1 lb powdered sugar
1 1/2 tsp maple flavoring
2 tablespoons strong coffee or espresso
2 tablespoons vegan butter melted
1/4 cup almond or soy milk
dash of salt
2 tablespoons strong coffee or espresso
2 tablespoons vegan butter melted
1/4 cup almond or soy milk
dash of salt
Whisk all ingredients together until smooth and then dip each muffin into the glaze and set out on a plate to set.
(my recipe is a combination of several heavily adapted by the Pioneer Woman and Isa Chandra - I am not a vegan just heavily allergic to dairy and eggs)
